Spigarello (or Spigariello) cabbage is an ancient variety of leaf broccoli, known in Campania region also as “minestra nera” or “cavolo minestra.” It is an ecotype specifically adapted to the climatic conditions of southern Italy, where it is considered a fundamental ingredient of traditional rural cuisine.
It is a hardy plant that adapts well to cold climate as well, cultivated especially for its abundant and continuous shoots. It is distinguished by its dark, often smooth leaves and by its ability to continuously produce tender sprouts (“spigarelle” or tops) throughout the winter, until early spring.
It is a nutritious vegetable, a key ingredient in soups, stews (often with beans), and rustic side dishes, including the typical Neapolitan “minestra.”
