TYPES OF CHICORY: A RICH AND DIVERSIFIED FAMILY
Chicory (Cichorium intybus and C. endivia) is one of the most diversified vegetable families in Italian tradition: it includes dozens of chicory varieties distinguished by shape, colour, season and culinary use.
To learn more about how many types of chicory there are, consult our Chicories and Radicchios Guide: Subdivision of chicories into types.
CATALOGNA AND PUNTARELLE
Catalogna chicories are among the most versatile for professional vegetable growing. Medusa is the quintessential Galatina puntarelle, a very early selection with a fresh and pleasantly bitter taste, an extremely crunchy and tender texture. Felix is the giant Chioggia catalogna: medium cycle (80 days from transplanting), with green and serrated leaves, pleasantly bitter and versatile in the kitchen.
TREVISO TARDIVO RADICCHIO: FORCING
Cagnani and Botteniga are the reference cultivars for Treviso type 2 for forcing — a production that requires a forcing and blanching process. Consult the complete guide for all technical details on radicchio forcing.
PINK, RED AND WHITE CHICORIES
The range covers all varieties of coloured chicory: pink chicory, red Verona chicory (Bandarossa, Gaia), red grumolo, white Chioggia chicory (Fiocco, Cristallo). For enthusiasts of rare varieties: Goriziana Voglia chicory and Castelfranco variegated chicory Mirabella.
